COCKTAIL RECIPE: PEACOCK SPRITZ

We like to think also that it alludes to the myth of the golden peacock, an extremely rare bird that, legend would have it, never rests. Created by Franco’s Bar manager Massimiliano Francavilla with the help of the bar team, it’s a refreshing Prosecco, vodka and juice concoction that is just perfect for winding down after a long hot summer’s day.
Massimiliano characterizes it as “exotic and effervescent with a zesty finish”. It’s the perfect drink, he says “for when you’re looking for something a little more modern and acidic than the classic Aperol spritz”.
INGREDIENTS
- 50ml (one and two-thirds oz) Ketel One vodka
- 5ml (one barspoon) fruit juice
- 5ml (one barspoon) fresh passionfruit
- 5ml (one barspoon) lime juice
- 20ml (two-thirds oz) passionfruit syrup
- 75ml (2½oz) Prosecco
Pour all the ingredients into a wine glass filled with crushed ice, and stir. For colour contrast, feel free to float an edible flower or two on top.
